soya paneer cutlet

Ingredients :

Soya chunks  – 100 gm
Cornflour – 1 cup
Bread crumbs – 1/4 kilo
Paneer – 150 gm
Potato – 1/4 kilo
Green peas – 1/4 cup
Onion ( big ) – 1
Green chilli – 1
Garam masala powder – 1 tsp
Chilli powder – 1 tsp
Turmeric powder – a pinch
Cumin powder – 1 tsp
Coriander leaves – a few
Curry leaves – a few
Salt – as needed
Oil – as needed

Recipe Details:

1. Cut onion, green chilli finely.
2.Cook potato, peel skin, mash and set aside.
3. Boil water in a pan.
4. Add soya chunks and switch off the stove.
5. Drain water after 15 minutes and allow soya chunks to cool.
6. Powder soya chunks.
7. Grate paneer.
8. Mix soya chunks, paneer, potato, green peas, green chilli and set
aside.
9. Heat oil in a frying pan.
10. Add onion, curry leaves and fry for a few minutes.
11. Add soya mix, chilli powder, turmeric powder, cumin powder, garam
masala powder, coriander leaves, salt, fry for a few minutes and switch
off the stove.
12. Mix cornflour, salt, water in a bowl to a batter.
13. Place the breadcrumbs in a plate.
14. Take a small portion of soya mix, shape into cutlet, dip in cornflour,
roll in breadcrumbs and set aside.
15.Heat oil in a frying pan.
16. Add the cutlets, fry till golden and serve hot.

SOYA NUGGETS & POTATO IN PALAK

Ingredients:

Paalak (spinach) 1 large bunch (750 gms)
4 Green chillies
1 small marble size tamarind
1 tsp Jeera (dry roast and powder it)
8 garlic chopped
1/4 tsp of garam masala
1 cube chicken stock
1 large potato cut into small size cubes
3/4 cup soya nuggets (soaked in hot water for about 10 min until they
puff, squeeze and wash 2-3 time until you get clear water)
1 tbsp oil
salt to taste

Recipe Details:

1. Clean and wash spinach, remove stems, blanch in a salted boiling water
for about 2 min. Remove and allow it to cool, grind it to fine paste along
with green chillies and tamarind (do not add water).
2. In a thick bottom pan heat oil, add chopped garlic fry till it turns
golden brown, add potato cubes, salt it slightly, fry till it turns
transparent, adjust the flame to medium.
3. Add nicely squeezed soya nuggets, add 1 cup of hot water and a cube of
chicken stock. stir well.
4. Cover and bring to boil. Now add paalak puree, garam masala powder and
jeera powder. Mix well, add little salt if required. Cover and cook
another 5 min.
5. When done serve it along with rice or chapathi.
